The story of the Aussergost farmstead dates back to the 17th century and has belonged to the Mulser family for over five hundred years. Generations have worked the land, raised animals, cultivated fruit and grains, preserving ancient knowledge with discretion and pride. In the 1980s, hospitality became central to their identity, and at the end of the 1990s Franz Mulser, after significant experience in renowned European restaurants, chose to shape a personal project high in the mountains. Thus Gostner Schwaige was born, an alpine hut that unites culinary expertise with true mountain spirit.
The kitchen is the beating heart of this place. Everything begins with what grows around the farmstead: herbs, flowers, fruits, and vegetables. In the large garden, nature’s generous offerings are carefully gathered and transformed. Ingredients are pressed, dried, preserved, and cooked with attention and sensitivity. The dishes tell the story of South Tyrolean tradition, yet with a contemporary lightness that surprises. Flower salads, hay soup, juices and mountain herb infusions become experiences rooted in the land, enriched by a note of refined curiosity.
Cheese also plays a leading role. At nearly two thousand meters above sea level, with tireless cows and generous pastures, milk is transformed into products that capture the fragrance of grass and the purity of the air. The hut’s dairy is a small workshop of patience and dedication, where cheesemaking traditions are practiced with respect and awareness.
Hospitality extends to the farm’s apartments as well, each dedicated to one of four women who lived within these walls over the past two centuries. It is a delicate tribute to memory and to the feminine strength that helped build and pass on this legacy. Staying here means immersing oneself in an authentic story, without giving up comfort or the beauty of the Dolomite landscape.
At Gostner Schwaige, everything flows in natural harmony. One arrives for a short break during a hike and ends up staying longer than expected.
