There’s a corner of England where time seems to slow down, where the countryside turns into poetry and food becomes a gesture of love it’s here that Mýse, the restaurant with rooms created by chef Joshua and sommelier Victoria Overington, was born.

Nestled in the small village of Hovingham, among the gentle hills of North YorkshireMýse is much more than a restaurant it’s a place where tradition meets contemporary elegance, where every dish tells a story of seasons, scents, and skilled hands.

The name, taken from an ancient Anglo-Saxon word meaning “to eat together,” captures the essence of the project: a cuisine that speaks of time and place, changing each day in harmony with nature’s rhythms and the gifts of the land. Everything here is crafted with grace from the dishes made with local and sustainable ingredients, to the handmade ceramics coming from a studio inspired by the Jurassic Coast.

Joshua and his team don’t simply cook they ferment, infuse, forage wild herbs, and create cocktails and drinks that taste of forest and wind. Meats are aged in-house, charcuterie is handmade, and every detail carries the scent of care.

And then there’s the atmosphere the kind only an old English inn can offer: exposed beams, a lit fireplace, warm light, and kind smiles. Whether you come for dinner or for a night between white sheets and silence, Mýse is a small refuge of beauty — an experience that indulges every sense.
